Lyburn Cheese Farm is owned by Mike Smales in Landford, Wiltshire. The handmade cheeses are all made on the farm near Salisbury, using their own pasteurised cow's milk.
The Old Winchester
Also known as Old Smales, Old Winchester is an aged version of Mike's Winchester cheese. Through ageing it becomes a much dryer, harder and crystalline cheese, becoming more reminiscent of a mature parmesan or Gruyere, with a distinctive nuttiness in flavour. Old Winchester is made with a vegetarian rennet. We try to sell this at about 18 months.
The Stoney Cross
The name Stoney Cross comes from an old WWII airfield 2 miles South of the farm. Stoney Cross is our youngest offering from Lyburn Farmhouse Cheesemakers. The cheese comes mould ripened, not dissimilar to a French Tomme De Savoie. At 8 weeks old it is creamy, buttery in texture, sweet flavours, with a distinctly earthy finish.
Lightly Oak Smoked
This cheese is still a washed curd cheese but during the maturation process the rind goes a glorious caramel colour. For those that enjoy a heavily smoked cheese, this may not suit, it is a light and delicate smoked flavour. The young cheese is taken to a local smoker, half a ton at a time, left there for a couple of days
